2 cups shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 (8 oz) block cream cheese, softened

1 cup whole milk or half-and-half

1/2 cup sour cream

1 (10 oz) can diced tomatoes with green chiles, drained

1/4 cup finely chopped red onion

1 jalapeño, seeded and finely diced (optional)

2 cloves garlic, minced

1/2 teaspoon smoked paprika

1/4 teaspoon ground cumin

Salt and black pepper, to taste

Chopped fresh cilantro or green onions, for garnish (optional)


Instructions

  1. Heat a saucepan over medium heat with a little oil or butter.
  2. Add chopped onion and garlic; cook until soft and fragrant (about 2–3 minutes). Add jalapeño if using.
  3. Lower heat and add the cream cheese. Stir as it melts.
  4. Slowly whisk in the milk or half-and-half until smooth.
