- 2 cups sliced English cucumbers
- 1 cup cherry or grape tomatoes, halved
- ½ small white onion, thinly sliced
- ⅓ cup olive oil
- ¼ cup white wine vinegar (or apple cider vinegar)
- 1 teaspoon dried parsley
- ½ teaspoon dried oregano
- ½ teaspoon red pepper flakes (adjust to taste)
- 1 teaspoon sugar (optional)
- 1 clove garlic, minced
- Salt and black pepper to taste
Instructions
- Wash and dry cucumbers and tomatoes. Slice cucumbers and halve the tomatoes.
- Thinly slice the onion and set aside.
- In a bowl or jar, whisk together olive oil, vinegar, garlic, herbs, red pepper flakes, sugar, salt, and pepper.
- Add the cucumbers, tomatoes, and onions to a large bowl or jar.
- Pour the marinade over the vegetables and toss to combine.
- Cover and refrigerate for at least 2 hours (or overnight) to let flavors develop.
- Toss before serving and adjust seasoning if needed.
