Description

A crisp and colorful salad of fresh cucumbers, juicy tomatoes, and slivered onions soaked in a zesty herb vinaigrette. This marinated mix is a refreshing, make-ahead side perfect for picnics, cookouts, or light weekday meals.


Ingredients

  • 2 cups sliced English cucumbers
  • 1 cup cherry or grape tomatoes, halved
  • ½ small white onion, thinly sliced
  • ⅓ cup olive oil
  • ¼ cup white wine vinegar (or apple cider vinegar)
  • 1 teaspoon dried parsley
  • ½ teaspoon dried oregano
  • ½ teaspoon red pepper flakes (adjust to taste)
  • 1 teaspoon sugar (optional)
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions

  • Wash and dry cucumbers and tomatoes. Slice cucumbers and halve the tomatoes.
  • Thinly slice the onion and set aside.
  • In a bowl or jar, whisk together olive oil, vinegar, garlic, herbs, red pepper flakes, sugar, salt, and pepper.
  • Add the cucumbers, tomatoes, and onions to a large bowl or jar.
  • Pour the marinade over the vegetables and toss to combine.
  • Cover and refrigerate for at least 2 hours (or overnight) to let flavors develop.
  • Toss before serving and adjust seasoning if needed.
