Ingredients

2 medium cucumbers, sliced

1 pint cherry or grape tomatoes, halved

1 small sweet onion, thinly sliced

1/4 cup olive oil

1/4 cup apple cider vinegar

2 tablespoons water

1 tablespoon sugar

1 teaspoon dried parsley (or 2 tablespoons fresh, chopped)

1/2 teaspoon dried basil (or 1 tablespoon fresh, chopped)

Instructions

Wash and slice the cucumbers and halve the cherry tomatoes.

Thinly slice the sweet onion.

Add cucumbers, tomatoes, and onion to a large bowl.

In a separate bowl, whisk together olive oil, apple cider vinegar, water, and sugar until the sugar dissolves.
