- 4 ears of fresh corn on the cob, husked
- 3 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 cup shredded mozzarella cheese (or Monterey Jack/cheddar)
- Salt and freshly ground black pepper, to taste
- 1 tablespoon chopped fresh parsley (for garnish)
- Optional: a pinch of red pepper flakes
Instructions
- Husk and clean the corn, removing all silks. Rinse and pat dry.
- In a saucepan, melt butter with olive oil over medium heat. Add garlic and sauté until fragrant (1–2 minutes).
- Brush garlic butter generously over each ear of corn.
- Cook corn using one of the following methods:
- Skillet: Pan-sear on medium-high for 10–12 minutes, turning occasionally.
- Grill: Cook over medium heat, turning regularly, for 10–12 minutes.
- Oven: Roast at 400°F (200°C) for 15–20 minutes.
- While still hot, top with shredded cheese. Cover to melt or broil for 1–2 minutes.
- Garnish with parsley, season with salt and pepper, and serve hot.
