Ingredients

  • 4 ears of fresh corn on the cob, husked
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup shredded mozzarella cheese (or Monterey Jack/cheddar)
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon chopped fresh parsley (for garnish)
  • Optional: a pinch of red pepper flakes

Instructions

  • Husk and clean the corn, removing all silks. Rinse and pat dry.
  • In a saucepan, melt butter with olive oil over medium heat. Add garlic and sauté until fragrant (1–2 minutes).
  • Brush garlic butter generously over each ear of corn.
  • Cook corn using one of the following methods:
    • Skillet: Pan-sear on medium-high for 10–12 minutes, turning occasionally.
    • Grill: Cook over medium heat, turning regularly, for 10–12 minutes.
    • Oven: Roast at 400°F (200°C) for 15–20 minutes.
  • While still hot, top with shredded cheese. Cover to melt or broil for 1–2 minutes.
  • Garnish with parsley, season with salt and pepper, and serve hot.
