12 ounces (340g) bowtie (farfalle) pasta

1 pound (450g) ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

2 tablespoons unsalted butter

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1/2 teaspoon garlic powder (optional)

Pinch of ground nutmeg (optional)

Bring a large pot of salted water to a boil. Cook the bowtie pasta until al dente. Drain, reserving 1/2 cup pasta water.

While the pasta cooks, heat olive oil in a skillet over medium-high heat. Add onion, cook until soft. Add garlic, cook 30 seconds.

Add ground beef to skillet. Cook, breaking up meat, until browned and cooked through. Season with salt and pepper. Drain excess fat.

In a separate saucepan, melt butter over medium heat. Add heavy cream and bring to a gentle simmer. Gradually add Parmesan, stirring until smooth. Season with garlic powder, nutmeg, salt, and pepper. Add pasta water if needed to thin the sauce.

Add cooked pasta and beef mixture to the sauce. Toss to coat evenly. Add more pasta water if needed for creaminess.
