  • 12 ounces (340g) bowtie (farfalle) pasta

  • 1 pound (450g) ground beef

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tablespoon olive oil

  • Salt and black pepper, to taste

  • 2 tablespoons unsalted butter

  • 1 cup heavy cream

  • 1 cup freshly grated Parmesan cheese

  • 1/2 teaspoon garlic powder (optional)

  • Pinch of ground nutmeg (optional)

  • Chopped fresh parsley or basil, for garnish (optional)

  • Extra Parmesan, for serving


Instructions

  • Bring a large pot of salted water to a boil. Cook the bowtie pasta until al dente. Drain, reserving 1/2 cup pasta water.

  • While the pasta cooks, heat olive oil in a skillet over medium-high heat. Add onion, cook until soft. Add garlic, cook 30 seconds.

  • Add ground beef to skillet. Cook, breaking up meat, until browned and cooked through. Season with salt and pepper. Drain excess fat.

  • In a separate saucepan, melt butter over medium heat. Add heavy cream and bring to a gentle simmer. Gradually add Parmesan, stirring until smooth. Season with garlic powder, nutmeg, salt, and pepper. Add pasta water if needed to thin the sauce.

  • Add cooked pasta and beef mixture to the sauce. Toss to coat evenly. Add more pasta water if needed for creaminess.

  • Serve immediately, garnished with parsley and extra Parmesan if desired.
